Lemon Garlic Skillet Chicken

Trying to figure out what to make for dinner? This lemon garlic chicken recipe is so simple, and you most likely have all the ingredients needed to make this delicious dish. The chicken came out to be so tender, and was paired with sweet potatoes and brussel sprouts.


Ingredients:

  • 4 boneless chicken breasts

  • 1/2 tsp of salt

  • 1/4 tsp of pepper

  • 1 tbsp of olive oil

  • 3 tbsp of unsalted butter

  • 1 small shallot (an onion is okay too)

  • 4 cloves of garlic, minced

  • 2 tbsp of all purpose flour

  • 1 cup of half and half milk

  • 1/2 cup of chicken broth

  • Juice of 1 medium lemon

  • 2 tbsp of chopped parsley

  • 1 small lemon thinly sliced

Instructions:

  1. Thoroughly dry the chicken breasts with paper towel and season with salt and pepper.

  2. Heat the oil on medium high in a skillet big enough to fit the chicken and the gravy. Do this until the oil starts to simmer. Add the chicken breasts until browned on both sides. Takes about 6-7 for both sides to cook. Transfer chicken to a plate.

  3. Reduce the heat to medium and add butter. Once melted, add the shallot, garlic, 1/2 tsp of salt, 1/4 tsp of pepper and cook until softened. Add in the flour until it's all coated.

  4. Stir in the half and half and the chicken broth until a smooth texture forms. Bring the gravy to a boil. Once it reaches the boil, reduce to a simmer and add the chicken back into the skillet. Cook the chicken for another 3-6 minutes in the skillet, and the gravy will start to thicken (use a thermometer to be sure its done). Garnish with parsley and lemon slices.
