Spinach Stuffed Shells

If you're looking for a good recipe to feed a lot of people or wanting to meal prep, this is the recipe for you.


Recipe from The Seasoned Mom


Ingredients:

  • 1 12 oz bag of Jumbo pasta shells

  • 2 10 oz bag of Chopped Spinach

  • 15 oz Ricotta Cheese

  • 2 cups of Mozzarella Cheese

  • 1 Egg

  • 1 tbsp of fresh basil, 1/2 tsp salt, 1/2 tsp garlic powder

  • 1 24 oz jar of Marinara Sauce

Instructions:

  1. Preheat oven to 375 degrees F. Spray a 9 x 13 baking dish with cooking spray and pour half the marinara sauce into the bottom of the dish. Save the rest for later.

  2. Prepare pasta as instructed on the box, drain and rinse under cold water.

  3. Squeeze all liquid out of spinach if using frozen, and place into a large bowl.

  4. Add in ricotta, 1 1/2 cups of mozzarella cheese, parmesan for flavor, egg, basil, salt, and garlic powder. Stir well until combined. Stuff each shell with the filling and place shells in the baking dish with the open side up.

  5. Pour remaining marinara sauce over the top of the shells, and sprinkle the remaining 1/2 cup of mozzarella over top of the shells.

  6. Cover with foil, and bake for 30 minutes. Remove the foil from the baking dish and bake for another 5-10 minutes.
