20 min Cherry Tomato and Basil Pasta

This recipe is from Oh Sweet Basil. I'm absolutely in love with how light this meal is even though its almost all carbs.


Ingredients:

  • 1/2 lb of angel hair pasta

  • 2 tbsp olive oil

  • 5 large garlic cloves

  • 2 lbs of cherry or grape tomatoes

  • 1 cup of loosely packed fresh basil

  • 3/4 tsp salt

  • 1/2 cup grated parmesan

Instructions:

  1. Bring a large pot of water to a boil.

  2. Add in a good handful of salt. Add pasta and cook until slightly undercooked.

  3. Using tongs, remove pasta from water into a strainer. Reserve the pasta water.

  4. While pasta is cooking, add garlic and olive oil to large skillet.

  5. Turn heat to medium and cook the garlic until soft. About 2 min.

  6. Turn heat to medium- high and add in tomatoes and salt. Cook about 2 more minutes.

  7. Add 1/2 cup of the pasta water to the skillet, and bring the mixture to a boil. Once at a boil, reduce to simmer for about 5 minutes. The cherry tomatoes should be starting to burst. Flatten them to squeeze the juice from the tomato.

  8. Add in pasta and cook for another 2 min.

  9. Turn the heat off and add in parmesan and basil to the dish.

  10. Enjoy!
