This recipe was given to me by my Mom a couple years ago. For some reason I always by bananas thinking I will eat them all and never do, so when they get super ripe it all works out because I get to make these yummy cookies!
Ingredients:
2 ripe bananas
Quick oats
Chocolate Chips
berries (optional)
Instructions:
Preheat oven to 375 degrees F.
Mash up ripe bananas in a mixing bowl.
Pour in quick oats until the mixture is barely wet, so the oats are being held together. I never measure the oats because it always depends on the bananas I use. Add in berries here if choosing to do so.
Place spoonful onto baking sheet and flatten. Bake for 17 minutes or until edges are starting to turn light brown.
Melt chocolate chips in microwave for 20 seconds at a time, until completely melted.
Make sure cookies are completely cool before spreading chocolate onto the tops of each.
Alternative:
For a quicker process, I like to add the chocolate chips straight into the batter (so step 3), and bake them as is in the spoonfuls without flattening them into cookie shapes.
