This recipe is literally AMAZING! It is so perfect for the holidays and not too sweet but sweet enough. I got this recipe from Ambitious Kitchen and will definitely be checking out more of their desserts.
Makes about 12 cookies so I recommend doubling it.
Ingredients for Cookie Dough:
1/4 cup melted coconut oil
1/3 cup pumpkin puree
1/4 cup organic cane sugar or coconut sugar
1 tbsp pure maple syrup
1 egg at room temperature
1 tsp vanilla
1 1/2 cups of fine almond flour or regular flour
3 tbsp coconut flour
1/4 tsp baking soda
1 tbsp of pumpkin pie spice
1/4 tsp salt
Ingredients for Salted Maple Frosting:
1/2 cup powdered sugar
1 tbsp melted butter
1 tbsp pure maple syrup
1/2 tbsp unsweetened almond milk ( I used heavy cream)
Pinch of sea salt
Instructions:
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
Using a large bowl, mix coconut oil, pumpkin puree, sugar, maple syrup, egg, and vanilla together. Then add in almond flour, coconut flour, baking soda, spices, and salt. Mix until the dough forms and let it sit for 5 min.
Using your hands or ice cream scoop, roll dough into balls, and place on the prepared cookie sheet. Flatten down each ball but make sure the shape is still round.
Bake for 8-11 min until thick and fluffy.
Cool completely before applying frosting.
For frosting: in a bowl, mix the powdered sugar, maple syrup, melted butter, and almond milk together. Add a pinch of sea salt for taste.
Frost the cookies and enjoy.
