Not the healthiest but sure is the tastiest. I saw this recipe on Pinterest and just had to try it. Besides Key Lime Pie I've never made a dessert with lime in it. These coolies are a fam favorite!!

Ingredients:
1 cup unsalted butter at room temperature
3/4 cup confectioner's sugar
2 tsp vanilla extract
1 tsp lime zest
2 1/2 cups all purpose flour
1/4 tsp salt
Lime Icing Ingredients:
2 1/2 tbsp lime juice
1 cup confectioner's sugar
1 tsp lime zest
Instructions:
Preheat oven to 350 degrees F.
In a bowl, cream together butter and sugar. Add in vanilla and lime zest and stir.
Add in flour and salt to butter mixture and mix until a dough forms. Dough may look crumbly, but will hold together when pinched.
Roll dough into balls and flatten with palm.
Bake for 10-12 minutes or until cookies barely begin to brown around the edges. Remove from oven and allow to cool completely before adding icing on top.
Lime Icing Instructions:
While cookies are cooling, combine confectioner's sugar, lime juice, and lime zest. If too thick, add more lime juice 1 tsp at a time.
Once cookies are cooled, ice cookies with a knife and set onto a cooling rack until set.
