This recipe is from A Kitchen Addiction, the link is attached below. This was such a yummy dessert/ breakfast to snack on as well as make! I love anything and everything lemon so I will definitely be making these again.
Ingredients:
3 cups all purpose flour
1 cup sugar
2 tbsp poppy seeds
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup plain whole milk yogurt
2 tbsp fresh lemon juice
1 1/2 tbsp grated lemon zest
2 large eggs
8 tbsp unsalted butter, melted
Glaze Ingredients:
1/4 cup sugar
1/4 cup lemon juice
coarse sugar for sprinkling
Instructions:
Preheat oven to 375 degrees F, grease muffin tin.
Whisk flour, sugar, poppy seeds, baking powder, baking soda, and salt together in a large bowl.
In a separate bowl, mix together yogurt, lemon zest, lemon juice, and eggs until smooth. Gently fold yogurt mixture into flour mixture until combined. Fold in melted butter. Do not over mix or the muffins will turn out dense.
Divide the batter evenly among the muffin tins. Bake until golden brown and a toothpick inserted in the center comes out clean, about 20- 25 minutes. For mini muffins about 15 minutes.
While muffins are baking, simmer sugar and lemon juice together in a small sauce pan over medium until it turns into a syrup consistency, about 3-5 minutes.
Remove the muffins when finished and brush the lemon syrup over the muffins.
