This recipe is from Eating Bird Food, link attached below. They were literally so easy to make incredibly fun. Its a great low sugar dessert or snack. I like mine frozen ;)
Ingredients:
Chocolate Layer:
1 cup chocolate chips
1 tbsp melted coconut oil
Peanut Butter Layer:
1/2 cup natural peanut butter
1/4 cup honey
2 tbsp melted coconut oil
pinch of sea salt (optional)
Instructions:
Line the muffin tin with paper or silicone liners
Melt chocolate chips and coconut oil for 1 minute in the microwave and stir. Continue heating in 15 second intervals until chocolate is nice and smooth.
Using a spoon, pour enough chocolate to cover the bottom of the liners, about 1-2 tbsp. Place the tray in the freezer to set the chocolate.
In another bowl, add peanut butter, honey, coconut oil, and sea salt. Microwave the mixture for 15-20 seconds until smooth.
Remove cups from the freezer and pour peanut butter into evenly into each cup. Place back in freezer and let sit for about 5 minutes.
Pour remaining chocolate over each cup so that the peanut butter layer is no longer showing. Sprinkle sea salt on top if you would like.
Place the tin back into the freezer and let it sit for 30 minutes to an hour to completely harden.
