Orzo Salad

This is one of my all time favorite meals!! I probably make it once a week not gonna lie. It is so simple to make for yourself, or take to a party. Also burrata is my favorite cheese, so that is what attracted me to this recipe.


After making this a few times, I have added cucumber, avocado etc. to the bowl just because I am obsessed with veggies!

Ingredients:

  • Orzo

  • baby arugula or spinach

  • 1 bell pepper

  • dried cranberries

  • sea salt

  • ground pepper

  • 2 balls of burrata

For Dressing:

  • 1/4 cup fresh lemon juice

  • 1/4 cup olive oil

  • 1/2 tsp dijon mustard

  • 1 clove garlic

  • half a small shallot

  • 1/4 tsp salt

  • pinch of ground pepper

Instructions:

  1. Set a large saucepan with water over high heat, bring to a boil. Cook orzo according to the instructions on the box. Drain, rinse with cold water, set aside.

  2. In a large mixing bowl combine arugula, bell pepper, dried cranberries, salt, and pepper.

  3. In a small mixing bowl combine all ingredients for the dressing. Finely chop the garlic and shallot before mixing.

  4. Add orzo to the bowl of salad. Toss with dressing.

  5. When served, top with burrata, and enjoy!!
