Zucchini Bread

The recipe used to make this zucchini bread is from AlexandraCooks.com! It was so easy to follow, and a great way to get kids to eat zucchini ;)

Ingredients:

  • 2 Cups Flour

  • 3/4 tsp baking powder

  • 3/4 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp kosher salt

  • 1 cup of light brown sugar

  • 1/2 cup of granulated sugar

  • 3/4 cup vegetable oil (I substituted this for butter)

  • 1 tsp vanilla extract

  • 2 eggs, lightly beaten

  • 2 1/2 cups grated zucchini

Instructions:

  1. Preheat oven to 350 degrees. Grease a 8.5" X 4.5" bread loaf pan

  2. Whisk together the first 5 ingredients listed, and in a separate bowl whisk together the remains ingredients minus the zucchini.

  3. Add the grated zucchini into the flour mixture and toss to coat it.

  4. Add the dry ingredients into the wet and stir until combined, and pour into pan.

  5. Bake for 45 minutes to an hour or until a toothpick comes out clean.

  6. Let the bread cool for 15 minutes in pan, then remove it and place on a cooling tray. Let cool completely before cutting.

  7. Enjoy!
